The first thing you notice is the cabinet – the marbling on the steaks, the wagyu, the Angus. But it is what sits behind the display that the shop is proudest of.
All of the meat is hormone free. All of it is additive free. And the sausages are made in house with real meat, which anyone who has ever read a label properly will tell you is not a given.

The line that stayed with us was a simple one. At the end of the day, the name above the counter is his own – so he makes sure that everything he does is of the highest standard, because he is the one who is accountable for it.
You cannot outsource that. And it is exactly why people go back to a business week after week: because someone in there genuinely cares whether it is right.

It is not only about what is in the cabinet. One of our team walked out of there and smoked his first ever brisket a few weeks later, using nothing but the advice he had been given over the counter. As a complete beginner, he could not believe how well it turned out.
That is the part a supermarket cannot do – advice from someone who actually knows the cut you just bought and what it needs.
